Jubilee trifle recipe: How to make the lemon and amaretti trifle that won the Platinum Pudding competition

A lemon Swiss roll and amaretti trifle has been named the official pudding of the Queen’s Platinum Jubilee.

Amateur baker Jemma Melvin’s creation beat 5,000 other desserts to be crowned winner of the Platinum Pudding competition.

She was announced as the winner on BBC One special The Jubilee Pudding: 70 Years in the Baking.

Dame Mary Berry and Monica Galetti judged the competition, which was run by Fortnum & Mason and the Big Jubilee Lunch charity.

Ms Melvin said Dame Mary made her cry with her feedback. “She said I nailed it. And from Mary Berry saying that I’ve nailed a recipe, and a bake to a brief that she knows everything about, that was it – that was the moment,” she said.

Here’s how you can make it yourself.

The following recipe will serve 20 people. It has a preparation time of two hours and a cooking time of between 30 minutes to one hour.

The Queen’s Platinum Jubilee bank holiday will take place around the UK on Friday 3 June 2022.

This is almost four months after Elizabeth II celebrated the 70th anniversary of her accession on 6 February 2022.

However, that also marked 70 years since the death of her father, King George VI, and was therefore not an occasion she wished to celebrate.

The first week of June was therefore chosen for the Platinum Jubilee weekend, just like the Queen’s Golden and Diamond Jubilees, with the summer month offering a better chance of good weather.

To create the four-day weekend, the late May spring bank holiday has been moved to Thursday 2 June.

There is an interactive map showing all the registered street parties on the official Platinum Jubilee website.

You can either enter your postcode to search for events near you, or click on a pin on the map. That will then tell you more about a particular event.

More than 2,200 parties have already been organised, as far north as the Scottish islands and as far south as Penzance.

The bunting is easy to make. Simply print out as many sheets as you need on A4 paper, and then cut out the individual triangles.

Cut along the dashed lines on each pennant to create holes for the string or ribbon to go through, and then thread the pennants along it.
